Quinoa and Avocado Salad

Ingredients
1 Tablespoon
Olive Oil
1 Cup of Organic
White Quinoa
2 Cups of Water or
Vegetable Stock
Dash of
Salt
Dash of
Pepper
Optional:
Tomatoes
Instructions
Heat
Olive Oil
In a Sautee Pan On Medium Heat
Add
Quinoa
and Stir until Lightly Toasted
Add Dash of
Salt
and
Pepper
to taste and Stir
Add 2 cups of Water or
Vegetable Stock
Allow to simmer for 15 to 20 minutes on Medium Low Heat
Dice
Avocado
Once
Quinoa
is Done Add
Diced Avocado
and
Tomatoes
Optional
Notes
You may add any other vegetables or dressing to the quinoa before plating.
