This is a super simple and no fuss white quinoa and avocado salad. Just a few ingredients for a nutritious lunch or side dish. Quinoa is a gluten free grain like seed that is easy to digest. It is considered a superfood because of its high protein content as well as being a good source of fiber, magnesium, and calcium. Avocados contain essential fatty acids which are considered to be good fats.
- Heat Olive Oil In a Sautee Pan On Medium Heat
- Add Quinoa and Stir until Lightly Toasted
- Add Dash of Saltand Pepper to taste and Stir
- Add 2 cups of Water or Vegetable Stock
- Allow to simmer for 15 to 20 minutes on Medium Low Heat
- Dice Avocado
- Once Quinoa is Done Add Diced Avocado and Tomatoes Optional
