This is a super simple and no fuss white quinoa and avocado salad. Just a few ingredients for a nutritious lunch or side dish. Quinoa is a gluten free grain like seed that is easy to digest. It is considered a superfood because of its high protein content as well as being a good source of fiber, magnesium, and calcium. Avocados contain essential fatty acids which are considered to be good fats.

Quinoa and Avocado Salad
Author: Thyme and Berry
Recipe type: Salad
Serves: 2-3
 
Ingredients
  • 1 Tablespoon Olive Oil
  • 1 Cup of Organic White Quinoa
  • 2 Cups of Water or Vegetable Stock
  • Dash of Salt
  • Dash of Pepper
  • Optional: Tomatoes
Instructions
  1. Heat Olive Oil In a Sautee Pan On Medium Heat
  2. Add Quinoa and Stir until Lightly Toasted
  3. Add Dash of Saltand Pepper to taste and Stir
  4. Add 2 cups of Water or Vegetable Stock
  5. Allow to simmer for 15 to 20 minutes on Medium Low Heat
  6. Dice Avocado
  7. Once Quinoa is Done Add Diced Avocado and Tomatoes Optional
Notes
You may add any other vegetables or dressing to the quinoa before plating.

    I really love avocado! I normally just eat it plain, on toast or in salads – I’ve never really make a dish with it. They’re starting to go out of season here, but maybe I can give this a try before I stop purchasing them.
